  1. Bueno en una cacerola ponemos a cocer las calabacitas quitándoles la base, en agua con un poco de sal.

    Ponemos en otra cacerola 2 jitomates -a los que les cortamos la pielecita en cruz- a hervir para poderlos pelar y cuando se empiece a despegar la piel los pelamos y los molemos en la licuadora.

En un wok salteamos en una cucharada de aceite cebolla picada, medio pimiento morrón picado, agregamos los jitomates molidos, sazonamos con una cucharadita de consomé en polvo o sal y pimienta y agregamos 1 cucharada de alcaparras y unas aceitunas. En una taza de agua disolvemos una cucharada de harina Minsa (para tortillas) y la adicionamos a la salsa y dejamos que ésta espese un poco.
  3. Una vez cocidas las calabacitas les cortamos la tapita donde va el tronquito y con cuidado, con una cucharita, las vaciamos conservando lo que sacamos en una ollita y ahí le agregamos granitos de elote y un trocito de mantequilla, sal y pimienta y con eso mismo volvemos a rellenar las calabacitas.

    En un refractario ponemos la salsa abajo y con cuidado colocamos las calabacitas por encima.
