- Cocemos la merluza, ya limpia, en una olla con una cebolla, laurel y sal. Cuando esté cocida le quitamos la piel y la desmenuzados lo más menudo que se pueda. Colamos el caldo y se reserva tanto el pescado como el caldo.

- Cortamos muy pequeña la media cebolla y la sofreímos en la misma sartén con un poquito del aceite de las gambas, echamos la harina, dejando que se tueste, vino, dejando que evapore el alcohol y un poco del caldo que tenemos reservado, el de haber cocido el pescado, echamos también el aceite de las gambas.
- Colocamos las albóndigas en una cacerola cuidando que no se amontonen y echamos la salsa, debe tener caldo que les cubra, se deja cocinar unos minutos, echamos los guisantes y ponemos las gambas encima, se harán muy pronto apenas con el calor residual.
