- 500 grs Berenjena
- 1 Puñadito Sal
- 1 Cebolla
- 100 grs Champiñones
- 1 Cucharadita Jengibre Molido
- al gusto Aceite, Sal y Pimienta Negra
- 1 Huevo o 50 grs Puré de Garbanzos
- 70 grs Avena Molida o Maizena
- 70 grs Pan Rallado
- 300 ml Salsa de Tomate, la hice casera
- Aceite para freír, utilicé de Girasol
Instructions to make to make Albóndigas de Berenjena y Champiñones con Salsa de Tomate
- Pelamos y cortamos a dados las Berenjenas. Las ponemos en remojo con Agua y un puñadito de Sal durante 30 minutos, para quitarles el Amargor. Las lavamos y escurrimos.
- Pelamos y cortamos en juliana la Cebolla. Lavamos y picamos los Champiñones. Salteamos en una sartén honda junto la Berenjena, Aceite, Sal, Pimienta y Jengibre. Cocinamos durante 15 minutos a fuego medio. Retiramos del fuego y dejamos templar.
- Trituramos el salteado de Berenjena. Agregamos a la mezcla el Huevo, Avena Molida y Pan Rallado. Mezclamos y rectificamos de Sal si fuera necesario. Dejamos reposar en Nevera bien tapado 30 minutos.
- Para hacer la Salsa de Tomate, coloqué en un cazo: 250 grs Puré Tomate, 50 ml Vino Blanco, Aceite, 1 Hoja de Laurel, pizca Pimienta Negra, pizca Canela molida, pizca Comino molido, 1/2 Cucharadita Azúcar, 1/2 Cucharada Albahaca seca y Sal. Cocemos a fuego medio durante 10-15 minutos, removiendo de vez en cuando. Reservamos.
- En una sartén honda o un cazo, colocamos el Aceite para freír, ponemos a fuego fuerte, y cuando esté listo, bajamos a fuego medio y vamos friendo las albóndigas en tandas de pocas unidades. Dejamos absorber las albóndigas en un cuenco con 2 servilletas de cocina. NOTA: Para ayudarme a hacer las Albóndigas, utilicé un saca-bolas de helado de 50 ml.
- Y.... ¡¡Listo!!!! Ya tenemos otra Receta Vegetariana, ideal para una dieta baja en proteína animal o una manera diferente de comer Verduras...😉😉 Las acompañé con un Arroz Blanco aromatizado con Puerros...👍👍 Espero que os gusten!!!!😘😘😘
