  12. Cuando evapore el vino, añadimos el caldo y cocinamos a fuego medio alto 5 minutos.
  13. Topamos y bajamos el fuego.Dejamos 5 minutos, destacamos y movemos con cuidado.Dejamos otros 5 minutos(el tiempo de cocción puede variar dependiendo del calibre de las albóndigas)
  14. Dejamos que repose unos minutos y con movimientos circulares ligamos para que la salsa emulsione.
