  2. Poner al fuego una sartén con un fondo de AOVE, hacer bolitas con la carne, pasarlas por la harina ir friéndolas ligeramente en tandas, sacar y reservar.
  3. En el mismo AOVE freír la cebolla cortada muy pequeñita y fina, cuando está pochada añadir el vino, dejar que evapore el alcohol y añadir el tomate rallado y pasado por un chino con el fin de quitar las semillas, dejar que el tomate se vaya haciendo, añadir la sal y el azúcar, cuando ya está casi hecho el tomate añadir las albóndigas, las aceitunas y el agua, dejar cocer a fuego lento hasta que las albóndigas estén hechas.
  4. Pelar, lavar y secar las patatas, cortarlas en bastones, freírlas en abundante AOVE bien caliente, sacar a un plato con papel absorbente, ponerles la sal y listas para acompañar a estas ricas albóndigas.
